With a texture like a squash, the chayote is really a tropical relative of the cucumber that can be grown throughout Florida. Its climbing vines are often trellised and bear a light green, pear-shaped fruit that is also sometimes called a mango squash and that contains a single, flat, edible seed.

There are two main varieties of chayote that are commonly grown in Florida, the ‘Florida Green’ and ‘Monticello White’.

To grow your own chayote vine, just plant a chayote seed, or an entire fruit, in the early spring anywhere in the state or during the fall in South Florida. Once established, your chayote vine will come back every year.
